How to read your lab card

Slip the card out of the crate and you’ll find a short list of measurements. Here’s how to read them.

Bead & mousse

Bead quality is the fineness of the bubbles; mousse retention is how long they last. Sound-aged bottles typically show a 22% finer bead than matched controls.

The sensory score

An independent panel tastes each batch blind and scores it for depth and balance. A score in the high 80s puts a bottle in the top decile of everything we’ve made.
